I love pineapple in my savoury and spicy dishes. Pineapple salsa is an amazing addition to your next Mexican food night. Just try it once and I promise you’ll be hooked. Go a step further and serve it in the pineapple and you have a clear winner.
All the flavours come together beautifully and this salsa has such a pretty combination of colours.
- 1 small pineapple (1 ¼ cup diced pineapple)
- ¼ large red onion
- ¼ red capsicum
- 1 jalapeno/ large chilli
- 20 mint leaves
- 1 tablespoon lime juice (juice of 1 lime)
- Pinch of salt
- Dice pineapple, red onion, capsicum and chilli.
- Chop mint leaves.
- Combine all ingredients in a bowl and serve.
