Healthy Vegan Snickers Bar

snickers_post1Let me put it out there, I was a Mars bar kid.

The inspiration for this recipe struck me out of the blue. One second I was living my life as I do and the next second I HAD to create a recipe for a healthy, vegan snickers bar.

This recipe is such a fun little project that is sure to please everyone in your life. It is absolutely delicious and everyone who has tried it has said that they are better than the real thing. The chewy, nutty nougat with the sticky, crunchy peanut layer are perfect coated in chocolate.

Healthy Vegan Snickers Bar

Yield: 8 bars

Healthy Vegan Snickers Bar

Ingredients

    Nougat Layer
  • 1 cup cashews (soaked)
  • ½ cup almond butter
  • ¼ cup rice malt syrup (or honey/ maple syrup)
  • 2 tablespoon coconut flour
    Caramel Peanut Layer
  • 1 cup dates (soaked)
  • ½ cup chopped peanuts
  • ¼ cup peanut butter
  • 2 tablespoon water
  • 2 tablespoons coconut oil (refined for a neutral taste)
  • 1 teaspoon vanilla extract
    Chocolate Layer
  • 1 cup coconut oil (refined for a neutral taste)
  • ½ cup cocao powder
  • ¼ cup rice malt syrup (or honey/ maple syrup)

Instructions

    Nougat Layer
  1. Line a loaf tin with cling film.
  2. Blend all ingredients and press into the tin.
  3. Flatten and place in the freezer while preparing next layer.
    Caramel Peanut Layer
  1. Blend all ingredients except peanuts till smooth.
  2. Mix in peanuts.
  3. Pour over nougat layer and let set in fridge for 2 hours or overnight.
    Chocolate Layer
  1. Heat coconut oil and rice malt syrup in the microwave or in a double boiler.
  2. Mix in cacao powder.
    Assembly
  1. Slice bar into individual bars. (I did 8)
  2. Place a wire rack over a tray.
  3. Place bars on the wire rack and pour chocolate over.
  4. The chocolate run off will collect in the try to be used again.
  5. Turn the bars to cover all four sides.
  6. Optional: Pop the bars in the freezer for 2 minutes between different sides so it sets harder.
  7. Snickers bars can be stored in the fridge or freezer.
