Guacamole is one of those foods that everyone loves. I mean, I don’t know if I can trust you if you don’t like guacamole. It’s green, creamy, tangy, salty and begs to have other yummy things dipped in it.
My Mom loves guacamole. You actually cannot trust her around this stuff. She has been known to consume entire bowls of it. My sister is constantly telling her that she is meant to have some guacamole with her tortillas instead of having some tortillas with her guacamole. She once asked me for more things she could have with guacamole because “I just need more things to have with my guacamole”. Oh Mom.
I guess it’s great news that guacamole is good for you then. Did you know that avocados are a great source of many nutrients like vitamin K and folate? The fat in avocados also mean they help you absorb fat-soluble vitamins. Surprisingly, they also contain more potassium than bananas! But really, as if you need a reason to eat avocado.
Guacamole is surprisingly easy to make. Hopefully this stops you from buying the pre-made stuff and seasoning packets from the grocery store. There is truly no need!
- 2 medium avocados (ripe, should not be hard when squeezed)
- 1 medium tomato
- ½ red onion (finely diced)
- juice of 1 lime
- 2 bunches fresh coriander (chopped)
- ½ teaspoon salt
- Halve the tomato and remove the wet centre and seeds.
- Finely dice tomato.
- Mash avocados.
- Mix all ingredients together
